Asian Eggs

Asian Eggs
Ingredients:

2 tbsp peanut oil
2 Large Eggs
2 Spring onions, finely sliced
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp grated fresh ginger
1 tbsp fresh mint, chopped
Seasoning

Method:

In a bowl, wisk the eggs with the spring onions, soy sauce, sesame oil, fresh ginger and mint. Heat the oil in a small frying pan until hot. Add the egg mixture and cook on one side until it starts to brown and set. Move the pan around to swirl the egg mixture and flip over. Cook for a further few minutes until both sides are golden brown and puffed.

Energy Boost

Energy Boost

This quick and simple snack is a great energy booster and is not only greak for kick-starting your day, but is also good served alongside spicy curries as a side dish. You can also add celery slices and raisins too if using for a curry.

Ingredients
1 Green Apple, deseeded, washed and cut into bite size pieces
1/2 cup walnuts
1/2 cup good quality Greek Yoghurt

Method
In 2 breakfast bowls divide one half of the prepared apple along with half the walnuts. Add the yoghurt. mix well and serve.

Bondi Bircher Muesli

When I lived in Bondi and had reahed my healthiest, I used to make my own version of Bircher Muesli - here is it.

Bondi Bircher Muesli

Ingredients:
1 Cup Toasted or plain rolled oats - of your choice.
Juice of 1/2 Lemon
1/4 cup soy/regular milk
1/2 cup Natural/Greek Yoghurt
1 Granny Smith Apple - grated
1 Tbsp Honey
Slithered Almods to top

Method:
Mix the oats/toasted Muesli in lemon juice and the milk, cover and soak overnight.
In the morning, add the yoghurt to the oats, along with the honey and freshly grated apple.
Keep the mixture quite wet.

Serve into 2-3 bowls and top with any fruit of your choice - if any at all (strawberries, mango, berries) and the almonds.

Banana French Toast

Another inspired Brekkie dish from Carsie. This one was from a New Year Camping Trip- 2008. As with any of these recipes, you can add/remove/replace the fruits with all of your choice. Another good option with this is fresh mixed berries (frozen are good too) and a dollop of good flavored yoghurt or greek yoghurt and take out the mayple syrup - or not!

Banana French Toast

Ingredients:
1 Banana
2 Eggs
2 Slices of thick cut white or wholemeal bread
1 tbsp butter/olive oil for frying
2 Tbsp Maple Syrup

Method:
Beat the eggs in a bowl. Place the bread pieces in to the egg mixture to cover. Remove and place into a pre-heated frying pan on a medium heat with the melted butter/olive oil. Cook for a few moments on each side, and remove.

Place the toast on to a serving plate. Slice the banana's in half and then slice down the middle so you have 4 quarters. Place 2 slices of the bananas on to each piece of bread and drizzle with the Maple Syrup.

Brekkie Pancakes

Brekkie Pancakes

Ingredients:
Maple Syrup pre-made pancake mix - mixed according to the packet
3 Tbsp Greek Yoghurt or any flavored yoghurt
1 tbsp Honey
1/2 Banana or fruit of your choice

Method:
Heat up a small frying pan. Add enough pancake mix to make the pancakes.

In a small bowl, mix the yoghurt with the honey. If your using flavored yoghurt, you can use this alone.

Remove the pancakes from the pan and place on to a serving plate. Slice up the bananas or the fruit of your choice on to the pancakes and add the yoghurt.

There are so many varients of this recipes so this is a guideline only and a starting point to open up to your own ideas!

Brakfast Smoothie

Breakfast Smoothie

Ingredients:
1/2 Banana
2 tbsp Muesli
2 Tbsp Blueberries
(you can use any choice of your own fruit, mixed berries, mango etc)
2 tbsp Greek or Natural Yoghurt
1 tbsp good Honey
1 cup soy or regular milk

Method:
Place all of the above into a blender and blend to form a smoothie. Usual tip when blending is to add the liquid to the blender first followed by all the fruits.

Carsie's English Breakfast Muffin

This brekkie snack is great. Introducted to me by my x room mate, now very dear friend Carls. You can keep it healthy or go all out. Im including both options below so take your pick - Enjoy!.

Carsie's English Breakfast Muffin

Ingredients:
2 Wholemeal or white English Muffin, cut in half
4 Tbsp low Fat/full fat Philadelphia Cheese
Handful of clean baby spinach
4 Eggs
1/2 Avocado
4-6 slices of Bacon or Parma Ham
Seasoning

Method:
Cut the Muffins in half and place under a grill or in a toaster. Meanwhile poach the egg in you own way i.e. a poacher, boiling water in a pan!..

Cook the bacon/parma ham in a dry frying pan on the stove. You can grill this if you like but if your using parma ham, it would be better to dry fry.

Place the toasted muffins on a plate, spread over the cream cheese and top with the bacon (if using) add some of the spinach. Place the poached egg on top and if using Parma ham instead of the bacon, top with this now. Finally, finish off with the crispy Parma Ham and season with salt & pepper.
