Salt & Pepper Calamari

Salt & Pepper Calamari

Ingredients:
300 grams Calamari Rings
Milk to soak the calamari rings
Plenty of salt and freshly crashed Pepper
½ tsp Chilli Flakes
Cornflour
Fresh Lime wedges
Oil for frying

Method:
Wash the calamari rings, place into a bowl of milk and leave to soak for 30 minutes. This process helps to tenderize the rings.

Heat the oil until it reaches a temperature hot enough to brown a crust of bread within seconds.

In a bowl, mix the cornflour with the salt, pepper and chilli flakes. Shake off excess milk from the rings and place into the flour mix. Lower into the heated oil a few at a time and cook until lightly brown.

Once all have been cooked, drain in absorbent paper. Serve with lime wedges or a home-made Alio Olio (garlic mayonnaise made of mayonnaise and garlic)
