Chicken with Mushroom Sauce
Ingredients…
2 chicken fillets
30g butter
100g baby mushrooms, sliced
2 Tsp dry white wine
1/2 cup cream
1/2 tsp wholegrain/seeded mustard
2 tsp chopped fresh chives
Method…
Cook chicken in pan with a little of the butter until almost done.Remove from pan and keep warm. Add rest of butter and mushrooms,cook, stirring, until lightly browned. Stir in wine, cream andmustard, and return chicken to pan. Allow sauce to thicken slightlyand chicken to finish cooking, then serve, sprinkling with chives.
Serve with creamy mash potato and veggies :-)
