Version 1 Spicy Chicken Curry
Ingredients
2 Chicken fillets
5 red chillies
1-2 tsp coriander powder or seeds
½ tsp turmeric powder
1 tbsp of oil
1-2 green chillies
½ tsp pepper
1 tsp cumin seeds
5 or 6 cloves garlic
2 Onions
1 tsp tamarind paste
½ tsp fenugreek seeds (be very careful not to burn them!)
3-4 tomatoes
Salt to taste
Curry leaves
1 tsp of ginger
½ cup of cocnut milk
Method
Clean and cut the chicken into bite size pieces. Fry until brown.
Grind the red and green chillies, coriander and tumeric to a fine paste. Slice and grind the onions. Grind the garlic, pepper and cumin seeds. Heat oil, add ginger, fuengreek, curry leaves, sliced onions and stir. Add the red chilli paste, fry well, add the garlic paste and stir. Add the tamarind juice and salt. Bring to the boil, add the chicken and let it simmer until the chicken is well cooked. Bring it to boil and remove. Add coconut milk and gently cook until heated through. Serve hot with steamed rice.
