Sharon's Un-Authentic Chicken Curry
One of my sisters' used to go out with someone whose father was a very good cook. She leart a few tips. One of them was to use fruit as the base of a good curry. This is not the exact recipe of course but it's one which I have taken the base of the fruit and mixed with some very un-authentic ingredients. It's fast, easy and a great mid-week curry...
Ingredients:
1 yellow skin Apple, peeled, deceeded and chopped into small pieces
1 Small Banana, peeled and cut into small pieces
1 brown Onion, chopped
2 Cloves Garlic, crushed
1 Large or 2 small Chicken Fillet, cut into bite size pieces
2 Fresh Tomatos, washed and cut into small pieces
1 Green Capsicum, washed and cut into small squares
2 Tbsp Balti Curry Paste
1 tbsp Fresh Coriander
Basmati Rice to Serve
Method:
Heat a little oil and fry the onion and garlic for 5 minutes on a low heat. Add the banana and apple and cook again on a low heat for approximately 5 minutes. Remove all from the pan and keep to the side.
Heat a little more oil again and add the chicken, cook until brown. Add the fruit and onion mix back to the pan with the chicken and add the curry paste.. Stir for a few minutes. Add the chopped tomato and a little water at this point. Stir well and cook for approximately 25 minutes covered. Add the green capsicum and cook for a further 10 minutes. Add the fresh coriander, stir and serve with the boiled Basmati Rice.
