Creamy Mayonnaise Potato Salad
Ingredients:
1 Clove Garlic, crushe
1 heaped Teaspoon Wholegrain Mustard
1 Tablespoon Lemon Juice
Approx 1/2 cup Mayo
Seasoning
2-3 cups Baby Salad Potatoes
2 hard Boiled Eggs, cut into quarters
3-4 Spring Onions and/or chives, finely chopped
1 Grated Carrot
Method:
Boil the salad potatoes until cooked, drain and leave to cool. Mix in the carrot and salad onions to the cooled potatoes. In a bowl mix the crushed garlic, lemon juice, mayonnaise and seasoning. Add to the potato salad and serve sprinkles with some chives, if using.
