Roast Beef V1
Ingredients
12-18 slices prosciutto or Parma ham
3 cloves garlic, crushed
1 handful dried porcini Mushrooms which have been soaked in water. Use the water with the beef when cooking to add flavor.
1 knob of Butter
1 Lemon
Seasoning
Fillet of Beef
Fresh rosemary or thyme
Red Wine
Method:
Wrap the ham around the whole of the meat joint. General rule of thumb is 200g per person so allow around 600g for this. Heat some oil and the butter in a large frying pan and fry the beef until browned on all sides, not allowing the ham to cook too much. Place into an oven dish and add the remaining of the ingredients. Cover and bake in the oven for as long as you can, I would usually try and cook this for minimum 2 hours but some like this rare, if you do – only cook for around 15 minutes per 100g
Veggies to accompany your V1 Beef
Bunch of Carrots on stalks
¼ cup dry White Wine
Knob of salted Butter
Small handful of fresh Herbs - Thyme
Method for Veggies:
Wash the carrots and trip off the stalks. Place into the foil which has been folded into a parcel (no need for perfection with this, as long as the juices are safe and will not run out) with the remaining ingredients. Place into a preheated oven on 180C for 25 minutes.
This is also great served with roasted garlic potatoes or creamy garlic mash potatoes. Something green never goes a miss either i.e. Broccli, Green Beans, Monge Tout.
