Roast Beef V 2
Ingredients…
5 Slices Proscuitto or Parma ham
600g Piece of Beef - lean
1 – 2 Cloves Garlic
1 Large Red Onion
Olive Oil
Black Pepper
Beef Stock
Red Wine
Bisto Gravy Granuals
Method:
Wrap the ham around the whole of the meat joint. Heat some oil in a large frying pan and fry the beef until browned on all sides, not allowing the ham to cook too much. Place into an oven dish along with red onion and garlic and drizzle of olive oil and cook uncovered for around an hour. After an hour, remove and slice in to thick slices. Add back to the pan and make up the sauce.
To make the sauce, add all meat juices from the meat to the saucepan along with the beef stock, red wine and Bisto (Gravox) to make up the thickness you like bearing in mind it will be continuing to cook for another hour or 2 so you do not want to make it too thick at this stage. Cover and bake in the oven for as long as you can, I would usually try and cook this for minimum 2 hours but some like this rare, if you do – only cook for around 15 minutes per 100g
