Flat Cap Garlic Mushrooms

Ingredients
1 Slices Italian Bread
Enough Goats Cheese (or feta) to spread over bread
2 handfuls of fresh Rocket
2 large Cap Mushrooms
2 Cloves Garlic, Crushed
2 tbsp Butter
21 tbsp fresh chopped Parsley
1 small red Chilli, sliced
2 tbsp grated Fresh Parmesan

Method
Wash mushrooms and place into flat oven dish. In a small pan gently heat the butter, garlic, Chilli and cook low until melted. Remove from the heat and add the Parsley, leave to the side.

Fill up the mushrooms with the garlic butter sauce and sprinkle with little parmesan. Place into a pre-heated oven of around 180 degrees and cover with foil for 30 mins.

Meanwhile toast the Italian Bread until just crisp, spread with the goats cheese (feta) and top with the rocket. Remove the cooked mushroom from the Oven and place on top of the rocket and toasted Italian bread.
