Lou's Jamacian Chicken

Lou’s Jamaican Chicken

Ingredients:
1 large Chicken Fillet, cut into bite size pieces
2 Chicken drumsticks
4 tablespoon light Soy Sauce
1 heaped teaspoon good quality hot curry powder (if you don’t like heat, use a mild one)
1 Tin Tomatoes whole
2 Cloves Garlic, crushed
1 cup fresh green beans
Boiled rice or mash potatoes to serve

Method
Marinade the chicken fillet and drumsticks in the soy sauce, garlic and curry powder for an hour at least. Add ¼ cup water to the sauce. Place into an oven proof dish and place into the preheated oven on 200C cook for 30 minutes. Keep checking that it has not dried out, if it is add a little more soy sauce/water (not too much soy sauce as this may make it become a little too salty). After 30 minutes, add the tin peeled plum tomatoes and cook for a further 10 minutes.

Meanwhile cook the green beans. Drain.
Cook the rice or potatoes, depending on which you have decided to use.
Remove the chicken from the oven, serve with the rice/potatoes and green beans.
