Chicken Hokkinen Noodles
Ingredients…
1 cup Fresh Hokkinen Noodles
1 tbsp sweet soy sauce
1 tbsp Chinese cooking wine or dry sherry
1 Chicken Filet, cut into bite size pieces
Pinch of Salt
½ tsp Chili Powder
3 cloves Garlic
Pinch of sugar
1cm piedce of fresh ginger, cut into small pieces
Veggies (own choice)
Oyster Sauce
1 Fresh red chilli, sliced
1 Brown onion, sliced
Method:
Boil Noodles, drain and set aside.
In a pestle and mortar, blend 3 cloves of garlic, the ginger and blend. Add the sweet soy sauce, Chinese cooking wine or dry sherry and some chilli powder. Use this to marinade the chicken for an hour.
Heat a wok and fry the chicken until almost cooked. Remove and set aside. Add some more oil and fry the onion, and any fresh veggies your using. Some ideas are sliced carrots, monge tout, green beans. Add the chicken back to the pan together with the noodles. Heat through, add the sweet soy sauce, dry sherry and a little sugar. Remove from the heat and serve sprinkled with some fresh mint leaves.
